This savory and creamy cottage cheese dip combines low-fat cottage cheese and fresh kale or spinach into a smooth, nutritious snack enriched with garlic, lemon juice, and optional red pepper flakes for a kick of heat.
Clean the kitchen area and wash hands with soap and water.
Gently rub fresh kale or spinach under cold running water and pat dry with clean paper towels or a salad spinner. Packaged produce labeled pre-washed shouldn't be washed again.
If using kale, remove kale leaves from the center stalk before chopping.
Heat oil in a pan over medium heat.
Add garlic, kale or spinach, and salt.
Cook, uncovered, stirring occasionally until tender, about 3 to 4 minutes.
Let it cool.
Transfer cooked kale or spinach to a blender.
Add cottage cheese to the same blender and puree until smooth.
Add lemon juice and red pepper flakes (optional). Blend until combined.
Storage
For safety, refrigerate any leftovers in an airtight container as soon as possible, or within 2 hours, and use within 4 days.
